Welcome to Tusa – where every dish tells a story of Nepal’s vibrant culture, rich biodiversity, and the essence of a new beginning. In the heart of Nepal, surrounded by the majestic Himalayas and lush landscapes, Tusa celebrates the treasures of this beautiful country. Our name, Tusa, translates to “New Beginning”, representing our mission to introduce, create, and promote the unique ingredients that Nepal has to offer. At Tusa, we respect the inherent worth of every ingredient, appreciating the sentimental, humane, and cultural bonds associated to each item that comes from our suppliers or is harvested from our landscapes and forests. Mother Nature has provided us with an abundance of uncommon and unexplored ingredients, tucked away in our walkways and wild landscapes. We set out on a quest to reinvent Nepalese cuisine, starting with the wild morel mushroom that is harvested from the isolated Humla Region and continuing with the Dale Chuk (sea buckthorn), wild freshwater eel, Yak dairy products, Mustang Apple, Jumla Marsi Rice, and numerous more locally hunted gems. Our culinary vision goes beyond the ordinary, drawing inspiration from the unique flavors and ingredients of Newari cuisine. We believe in the power of seasonal ingredients to elevate our dishes, offering a fresh perspective on Nepalese gastronomy. Driven by a passion for discovery, we’ve formed partnerships across Nepal, from the far western reaches to the eastern corners of the country. Together, we explore, source, and celebrate the diverse flavors of Nepal, using traditional fermentation techniques passed down through generations.
